This soup is hearty, delicious and so good for you! It is a favorite on chilly fall days and through the cold winter months!
This soup is great for gut healing as it is easy to digest and soothing to the gut lining. Made with bone broth (read about the healing power of bone broth here), rich in protein and fiber and full of nourishing fats, it is also very hydrating.
Ingredients
- 1 cup brown rice or brown rice noodles
- 2 tablespoons fat of choice (ghee, butter, avocado oil, etc)
- 1 large onion
- 4 carrots, diced
- 3 stalks of celery, diced
- 3 garlic cloves, minced
- 5 cups bone broth
- 5 cups water
- 3-4 chicken breasts
- 1 1/2 teaspoon thyme
- 2 bay leaves
- 1-2 tablespoons parsley
- salt and pepper to taste
Instructions
- In a large pot, heat oil and add onions, carrots, celery and garlic. Sprinkle with salt and saute until vegetables start to soften.
- Add chicken, broth, water, rice, thyme, bay leaves, parsley, salt & pepper.
- Cover the pot and bring soup to a boil.
- Turn heat to low and simmer for 1 hour.
- Remove chicken, shred it and return to pot.
- Add salt and pepper to taste.
