Slices of sweet, juicy, fall apples that are in season right now add an amazing flavor to this salad of fresh greens! Drizzled with a homemade apple cider vinegar dressing and topped with toasted nuts, this salad is the perfect side dish.

Ingredients
- 5 cups mixed greens (spinach, romaine, kale)
- 2 small apples, cored and thinly sliced
- 2 oz feta cheese
- 1/3 cup toasted walnuts or pecans
- 1 shallot, finely diced
- 1 tablespoon lemon juice
- 2 tablespoon apple cider vinegar
- 1 tablespoon raw honey
- 1/3 cup olive oil
- salt & pepper to taste
Instructions
- Combine greens, apples, feta & walnuts in a large bowl.
- For the dressing, add rest of ingredients in a small bowl and whisk well.
- Pour dressing over salad and toss to combine.
- Serve immediately. Refrigerate leftovers.
