These strawberry chocolate chip muffins were a hit with the kids and the adults liked them too! 😉 Unlike most recipes on this blog, this one is not gluten free. (If you are needing it to be gluten free, try using oat flour or your favorite gluten free flour mix.) You can also use spelt four in place of the wheat.
Ingredients
- 1 egg
- 3/4 cup raw or almond milk
- 2 teaspoons coconut oil, melted
- 1 1/2 teaspoons vanilla
- 1 1/4 cups fresh ground whole wheat flour
- 2 teaspoons baking powder, aluminum free
- 1 teaspoon baking soda
- 1/4 cup coconut sugar
- 1/4 teaspoon Himalayan Pink Salt
- 3 strawberries finely chopped
- 2 tablespoons of dark chocolate chips, roughly chopped ( I like Enjoy Life brand)
Instructions
- Preheat oven to 350 degrees and grease muffin pan.
- In a large bowl place egg, vanilla, milk and coconut oil then whisk to combine.
- Into the vanilla/egg mix sift your flour, sugar, baking powder, baking soda and salt then whisk to combine.
- Add strawberries and chocolate chips until almost combine. Careful not to over mix.
- Pour batter into muffin pan.
- Bake for 8-10 mins, until lightly golden and the tops spring back when lightly pressed.
- Allow to cool in their trays for 5-10 mins then transfer to a wire rack to cool completely.
