This Mexican salad is very delicious! One of my favorites in the summer! Containing black beans for the protein, complex carbs & healthy fats, it should keep you full and those blood sugar levels stable. There are not exact measurements for this recipe as it is kind of a dump and mix sort of thing!
Ingredients
- organic salad greens
- organic black beans
- sweet potatoes, roasted
- tomatoes, diced
- avocado, sliced
- fresh cilantro
- juice of 1 lime
Instructions
- Dice sweet potatoes, toss with oil of choice and roast on baking sheet at 400 degrees for 15 minutes.
- Arrange salad greens on a plate. Place rest of ingredients on top of the greens. Sprinkle with lime juice.
