Coconut milk is a great alternative to heavy cream if you are needing to avoid dairy for gut health. Soups are a great way to include veggies like kale, as it softens the sometimes tough green, making it easier to digest.

- The coconut milk makes this soup so creamy. This is the brand I use.
- Replace the red potatoes with sweet potatoes if needed.
- The recipe calls for chicken broth. Buy it here or save some money and make your own with this easy recipe.
- When buying your Kielbasa sausage, check your ingredient list. Look for ones made with real ingredients. No nitrates, flavorings or fillers.
- If you can’t find a good Kielbasa sausage, use regular ground sausage (MSG free!)
- Don’t have kale? Use spinach instead. Kale will hold up better, aka not get slimy. 😉
- If potatoes don’t sit well with your gut, try using cauliflower instead.
Ingredients
- 1 tablespoon avocado oil
- 1 cup onion, diced
- 1 cloves garlic, minced
- 2 lbs red potatoes, cubed
- 2 cups kale, chopped
- 1 can full fat coconut milk
- 3 cups chicken broth
- 12 oz Kielbasa sausage
- 1 1/2 teaspoon pink salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper
Instructions
- Heat oil in pot on the stove. Saute onions for 2-3 minutes. Add garlic.
- Add in rest of ingredients (besides kale), bring to a boil and reduce to a simmer.
- Cook until potatoes are tender.
- Add kale last 5-10 minutes of cooking.
