I was on the hunt for a brownie. One that was extra chocolaty (is that a word?), free of refined sugar & flour and one that did not use black beans. As much as I do love a good black bean brownie, I honestly didn’t want to have to mess with the blender! Inspired by this online recipe, I made a couple upgrades and was so happy with the results that I’m sharing it with you.
A couple warnings:
- If you are not an extreme chocolate fan, than this brownie is NOT for you. 🙂
- If you are not a coffee lover, than this brownie is not for you. Because it pairs SUPER WELL with a coffee. 🙂

- Enjoy Life Semi-Sweet Chocolate Chips Variety Pack (3 Mini Chips, 3 Mega Chunks)
- Navitas Organics Cacao Powder, 16 oz. Bags — Organic, Non-GMO, Fair Trade, Gluten-Free
- Nutiva USDA Certified Organic, non-GMO, Unrefined Granulated Coconut Sugar, 1-Pound, Pack of 3
- Bob’s Red Mill Arrowroot Starch/Flour, 16-ounce
Ingredients
- 6 tablespoons coconut oil
- 3/4 cup chocolate chips
- 2 large eggs
- 2/3 cup coconut sugar
- 2 teaspoons vanilla
- 1/4 cup cacao powder
- 3 tablespoons arrowroot powder
- 1/4 teaspoon pink salt
Instructions
- Preheat oven to 350 degrees and line an 8x8 pan with parchment paper. Grease the parchment paper.
- Heat coconut oil & chocolate chips in a saucepan on the stove on low heat until melted.
- In a separate bowl, beat together eggs, coconut sugar and vanilla until smooth. Add melted chocolate mixture and mix well.
- Add cacao power, arrowroot powder and salt until well combined.
- Pour batter into pan Bake 25-30 minutes.
- Let cool in pan for 15 minutes before cutting.
Hi Carrie! My friends who eat vegan do not eat eggs, so I would substitute that for the flaxseed/water mixture that works great in place of eggs! 🙂 These look good!!
