Nut Butter Stuffed Dates: a healthy treat for your sweet tooth!
Inspired by Restoring Radiance for these nut butter stuffed dates, they were a hit!! First of all, I’m a sucker for anything peanut butter & chocolate (anyone else?!) and while these originally called for almond butter, I switched it out for my favorite peanut butter instead! SO GOOD!
A couple things:
- Whatever nut butter you decide to use, make sure the ingredient list is only that particular nut and maybe some salt! Many nut butters contain added sugar which is totally unnecessary! Check your labels and choose one without.
- Mix it up. Experiment with different types of nut butters! Almond, cashew or pecan would be pretty fabulous!
- For the chocolate in this recipe I am using Enjoy Life chocolate chips. If you want to make your own chocolate, my dipping chocolate recipe would work great!
- Use medjool dates. They typically are larger and have a caramel like flavor and chewy texture. YUM!
Ingredients
- 8 medjool dates
- nut butter of choice
- 1/4 cup Enjoy Life chocolate chips
- 1 tsp coconut oil
Instructions
- Slice the dates in half. Remove pits.
- Stuff dates with nut butter.
- Melt chocolate chips & coconut oil over low heat on the stove.
- Dip dates in chocolate. Place on parchment paper/cookie sheet.
- Place in freezer until chocolate is hard.
