This stove top dish is easy to make, incorporates veggies and is a great way to use leftover cooked rice!
Ingredients
- 1 lb ground turkey (organic or pastured)
- 1/2 cup green pepper, chopped
- 1/2 cup onion, chopped
- 1 cup chopped spinach
- 2 cloves garlic
- 2 cups cooked brown rice
- 1 tsp chili powder
- 1/4 tsp pepper
- 1 can fire roasted tomatoes (organic)
- 1/2 cup cheddar cheese (optional)
Instructions
- Brown turkey with pepper and onion. Add garlic
- Add rest of ingredients, minus the spinach, and simmer for 15 minutes.
- Add spinach the last 5 minutes of cooking.
- Add cheese if using.
