These whole roasted carrots are bomb. The perfect side dish, full of fiber and super good! Leaving them whole makes it feel fancy, ya know and cuts back on your prep time! Win-win in my opinion!

Recipe Notes:
  • If you buy organic carrots, don’t peel them. There are many nutrients in the skin. Just scrub them well.
  • These are good leftover too.
  • Check the label on your balsamic vinegar. Some contain coloring.
  • I love to useĀ Chosen Foods avocado oil but you can also use coconut oil.
